gokayama kunsei tofu

One thing we brought home with us from Toyama was Gokayama Kunsei Tofu.

Kunsei means smoked. This is seasoned with shoyu, and other condiments.

I sliced this up and we had this with beer.

It tastes like a semi-hard cheese more than anything. You can't really taste the shoyu.

It probably would go better with some wine.

I'm glad we got to try this and would buy this again.

How interesting! I took a closer look at the photo and the color is just like the smoked buffalo milk mozz that I used to find at the supermarket. Glad you tried it.

Not sure, but the smoked mozz was a wee bit firmer than the fresh type. I've been trying to find it again but no luck, and the photo that I took ages ago was either deleted accidently or lost in a black hole of files somewhere. We really liked it since it brought a whole new taste experience to caprese salad and sliced in sandwiches.
