vegetable hash

I had some spice rub leftover, so I bought some salmon to make Ellie's "salmon with sweet and spicy rub".

For the side, I shredded some zucchini and sweet potato and sliced some onions to make a veggie hash.

Did you know if you google "how to make hash" you will not come up with a food recipe?

Anyway, I envisioned something a bit crisp, but I guess I crowded the pan, so it turned out soft.

Seasoned with salt, pepper and a pinch of herb de Provence.

This was good. Even better was the combination of the hash with an egg on toast for breakfast.

It is supposed to rain all day, I guess I'll clean the house...

  6. Thanks Barbara, I am happy to be in Japan and sad to have had to leave Hawaii too. Happy to be able to cook what I want yet sad not to have someone to cook for me.
