I had some spice rub leftover, so I bought some salmon to make Ellie's "salmon with sweet and spicy rub".
For the side, I shredded some zucchini and sweet potato and sliced some onions to make a veggie hash.
Did you know if you google "how to make hash" you will not come up with a food recipe?
Anyway, I envisioned something a bit crisp, but I guess I crowded the pan, so it turned out soft.
Seasoned with salt, pepper and a pinch of herb de Provence.
This was good. Even better was the combination of the hash with an egg on toast for breakfast.
It is supposed to rain all day, I guess I'll clean the house...
I forget how bright orange and delicious the eggs are over there. Jealous!

I love hash (the food kind!) and it looks great. Eggs with runny yolks and toast are a must for me. ;-)
