I've been making apple crisp lately. Not sure why, but I think I may be addicted to it.
Probably because I put a dollop of vanilla ice cream on it as soon as it comes out of the oven.
Changing the subject a bit...I needed something fast for breakfast on Sunday, so I figured why not try putting apple crisp and muffins together?
I used this recipe by Tyler Florence for the base of the muffin, and added 1/2 an apple (chopped), a handful of cacao nibs, 25 grinds of cinnamon, 3 little grabs of muesli and 1/2 a teaspoon of ground flax seed.
Instead of the butter, I used all oil. I had to bake them a little longer than 20 minutes (About 24 minutes).
The texture was a little drier than when I make banana muffins, but it was still delicious. There was a lot going on in there with the muesli, nibs and apple, lots to chew. I'll probably make this again when I have leftover apples.

I can imagine how good they taste. Mmm mmm. BTW I wonder if Costco has a good deal on butter. Does anyone know?
ReplyDeleteThat top photo looks so delicious. It reminds me of Dutch apple pie which is one of my favorite pies! We often bring it to my parents' house on the weekend for dessert.
ReplyDeleteDo you mean Costco in Japan, HS? I'm not sure. I think the Costco in Hawaii has LOTS of butter.

I was thinking that it's best to get in as much baking as possible now...before the weather turns so hot that the last thing anyone will want to do is to be in front of the oven or stove on a summer's day. Yikes!

aww, we are being spoiled here..three desserts in one post :-) yummy although i have the preference for the first one..the apple crisp looks absolutely to die for...im tempted to make the recipe tonight!!

Mmm, I love adding muesli to muffins - always gives it such a hearty crunch :) Oh man, could you imagine ice cream and whipped cream alllll over the crisp? drooool ^_^
