Friday, it rained for most of the day, so I stayed indoors.
Not having moved around much during the day, I wasn't too hungry when it came to dinner time.
I ended up making something easy and light.
Tofu Salad.
Instead of the usual shoyu based dressing, I used Chinese Chicken Salad dressing.
The results...delicious.
I washed some lettuce (I actually found a really teeny bag for 99 yen (about US$.99)), added some chopped green onions, shredded carrots and tofu.
When I went to the market the day before, I found some tofu in individual packets, perfect for one serving (about 70 grams). Four of these packets were only 128 yen (about US$1.28), really reasonable.
I think we'll be having this salad version as the weather starts to warm up.
p.s. I'm sending this to Deb for her Souper Sundays, a great event which is not only for soups :)

Hard to go wrong with tofu salad! Looks yummy as usual.
I like making this salad too with Chinese dressing- and I add some tuna. Perfect light meal for hot days

Usually when I make tofu salad with the shoyu based dressing, I add tuna Mary, but skipped it this time :)

Yum! Honestly I used to avoid tofu at all costs, but have really enjoyed it in the last few years!
the salad looks nice & refreshing. I've been trying to eat more salads again because I'm gaining so much weight back on my "normal" eating trend! I've got a block of tofu in the refer, but too bad no lettuce...

I usually like tofu and salmon on mine also Jalna, but was too lazy to make the shoyu based dressing :p

With the extra poundage I put in in the past couple weeks, I better put tofu on the shopping list. Looks and sound delish!
