re-vamp

Previously, I used to make my stuffed bell peppers like this.

Now, instead of using pre-made sauce, I make Ellie Krieger's "Easy Tomato Sauce" and top the stuffed bell peppers with them.

For the filling, instead of just putting onions and Italian seasoning. I now add some minced carrots and zucchini whenever I can (zucchini is not always in the markets).

Maybe a little healthier? Hopefully.

Stuffed peppers are such a versatile dish - there are endless variations (and yes, some are healthier than others :))

Hi Kat! Right, I love more veggies in it. I haven't made stuffed bell pepper for a while. Do you use Japanese γƒ”γƒΌγƒžγƒ³? I miss those small bell peppers that arectually fit in Obento box. American size is too huge! :-)

The only large bell peppers they sell here are the red & yellow kinds Nami, you can find some from Japan but mostly are from Korea or New Zealand.
