Anyway, since it has been so cold and Satoshi's been working late, we've been eating a lot of soup lately.
One that I made recently was a beef barley.
150 grams minced beef (about 1/4 pound)
1 tablespoon olive oil
half an onion, chopped
half a carrot, chopped
3 small potatoes, chopped
4 cups water
1 can of chopped tomatoes
1 consomme cube
1/4 cup of barley, rinsed
salt, pepper
a pinch of thyme
Put meat and onions into a pot and brown with oil.
Add veggies and coat with oil.
Add water and bring to a boil.
Add consomme cube, can of tomatoes and barley.
Simmer for 20 minutes while taking off the scum from top.
Season with salt, pepper & thyme.
Serve with toasted bread.
Fast, delicious and a great way to warm-up!
I'm sending this one to Deb's Souper Sundays, check out her blog on Sunday for her round-up. I am amazed at all the varieties of soup there are.

Your soup looks delicious! Beef Barley is one of my favorites. Thanks for joining in with Souper Sunday this week. I'll add you to Sunday's round-up. Stay warm!
wow this is such a healthy soup! Barley fills you up too! Fit for winter!
That sounds really really warming -- we've had a few flurries here a couple of days ago, but it didn't stick. Exciting enough for this Florida girl, though. :) My husband works up on a mountain behind us and said it was snowing more up there.
Thanks for hosting such a great event, Deb :)
Thanks Phoebe :)
Take care you two.

Thanks Abigail! I would be happy just to see a few flurries :)
Stay warm!

Snow if the first thing I like about winter. Second is soup, and more soup. I made oxtail soup last night b/c it makes me think of home!
ooh oxtail sounds like comforts of home, Rowena :)
Take care and keep bundled!
