cocoa berry mochi (part 2)

The weather was nice on Saturday.

I had ingredients to make another batch of Cocoa Berry Mochi, which is actually 1/2 of the recipe that is linked.

The first time around I made it in a 8 inch x 8 inch pan, so this time around I tried making this in muffin papers.

It turned out that there was enough batter for 8. My muffin pan makes only 6 so I made the remaining 2 in ramekins.

Because I was too lazy to grease the ramekin, I placed the muffin paper in the ramekin and baked them on my turntable.

I think this way came out better than the first time. The mochi really rose. I didn't add chocolate chips this time and was happy with the chocolatiness of this version.

What's the texture of the Cocoa Berry Mochi like? Is it chewy? Or like normal cakes?

Looks really good and making them in a muffin pan is a good easy way to do it.

Now if my boss had thought to use muffin pans and cup liners, clean-up would've been a snap. Baking mochi in large batches using the greasing method was always a not-so-fun task.

Rowena, The first time around I used a scalloped pan, and it was a P.I.T.A. to clean afterwards, so this time around I went with the muffin papers. I can only imagine what you went through at the bakery having to grease them!

The first time I made it in a pan, Manju all the chips were stuck on the bottom of the pan and a P.I.T.A. to clean, so I didn't put them in this time...no alien, just lazy dish-washer :p
