What do you do with leftover meatloaf? Growing up, we ate them as sandwiches. The leftover meatloaf was never heated. Mayonnaise (Best Foods, of course) and ketchup were the preferred condiments. (I think in a previous post I talked about eating foods cold, this is definitely one that works.)
Nowadays, we eat them on whole grain bread, mayo slightly spread on the bread with a little ketchup. Oh, and the meatloaf was actually a beef/tofu mixture, using leftover tofu.
A little healthier than what I remembered as a kid, but still just as good.

I think for the fact that I grew up with 2 brothers and 2 sisters, there never was leftover meatloaf (although the yukky vegetables for sure!).
Loving those leftover, Kat! I haven't had meatloaf in ages, but I remember really loving leftover sandwiches!

I think few things are better than a good leftover meatloaf sandwich. And yes, it must be cold, on soft bread with a little mayo and ketchup! ;-)

Whether it's left over meat loaf, beef loaf, spam or corned beef, I love stirring them in garlic rice or put them in dumplings. Great idea with mixing it with tofu. How do you do it?
Sounds delicious Mikuru. Making meatloaf with tofu in it, just reduce the amount of beef and mix in a little tofu with your meatloaf mixture.
