ume spareribs

On the page opposite the Sweet Sour Spareribs recipe was the recipe for Ume Spareribs which caught my eye.

Since the market we were shopping at was having a sale on spareribs, I bought some to try this recipe.

From "Recipes Please"

3 pounds spareribs

Sauce:
2 cups brown sugar
1 cup catsup
1/2 cup shoyu
1/2 cup oyster sauce
2.5 tablespoons ume juice
2 cloves garlic, grated
1 piece ginger, grated
1/2 cup miso
1 tablespoon sesame seeds

Mix all sauce ingredients thoroughly
Marinate ribs in sauce overnight
Bake at 350F (180C) or cook in a slow cooker until done

NOTES: I only bought 1 pound of meat so I cut the sauce down to 1/3-ish

I was a little disappointed that the sauce didn’t use much ume.

Also, I wasn't too sure how long to bake this or how to bake this

I ended up putting it into a baking dish with the sauce and covered it with foil to bake for 1 hour

Then I took off the foil and baked it for 30 minutes.

This tasted similar to hoisin sauce ribs!

I didn't have ume juice so I used ume vinegar instead
I also did not add the sesame seeds 

Satoshi enjoyed this and I had to stop him from drinking all the sauce!

Since hoisin sauce is not readily available these days in our markets, I would definitely use this sauce to make hoisin sauce chicken or ribs and want to try this sauce with chicken next.

I can imagine Satoshi drinking up the sauce...a good sign of how great it was!

Rowena, I've taught him to put the gravy onto his rice, so he really enjoys eating things this way :)
